Cut out Sugar Cookies

With the holidays right around the corner the only thing I want are cut out sugar cookies! The problem with most are they are laden with butter, wheat, eggs, and other off limits ingredients for someone living with food allergies or intolerances. But after quite a bit of experimenting in the kitchen I have come up with a recipe that not only works perfectly with cookie cutters but also is tastes so good that it doesn’t even need decorating!

This is a simple recipe and the hardest part is waiting long enough for the cookies to cool before eating one or three!

First make sure your margarine is very soft so it is easier to cream the sugar quickly with it.

Make the flax egg and mix it into the sugar mixture and add vanilla extract.

In a separate bowl mix all dry ingredients together and slowly incorporate that into the sugar mixture.

Blend until the dough looks like very crumbly.

Now use your hands to combine the dough together and let rest for at least twenty minutes on the counter.

Roll out the dough and sprinkle it with gluten free flour so it will not stick.

Cut out shapes and place on a parchment paper lined cookie sheet.

Bake and let cool for five minutes on cookie sheet and transfer to cooling rack to cool completely.

Eat as is or decorate with “butter”cream frosting or royal icing. This is a great recipe to share with family or have the kids help.
