Chickpea blondies are healthy

When it comes to desserts sometimes it can be a great way to hide some healthy foods in there without letting the kids or your waistline know the difference. With allergies it can be even more difficult when there are restrictions and aversions..

But I think these super simple chickpea blondies are just what is needed.

Drain and rinse the chickpeas thoroughly. Make sure all the excess moisture is gone or the blondies will never set.

Line an 8x8 pan with parchment paper and set aside.

Next throw all the ingredients in the food processor except the flour, guar gum, and chocolate chips. Blend until smooth and well incorporated.

Add the flour and guar gum to the batter and blend on high for thirty seconds.

Now fold the chocolate chips into the dough.

Pour the dough into the paper lined pan and spread evenly.

Bake for twenty five to thirty minutes until a toothpick can be inserted and come out clean.

After baking let the blondies cool in the pan for ten minutes then transfer to a cooling rack to cool completely for an hour or more.

Cut and store in the fridge for up to five days if they last that long!
